RECIPE : JAMU CITRUS KICKER by Clovis Ferguson

JAMU CITRUS KICKER

If you have ice and a Nutribullet or smoothie blitzer this is a very nice wake up call - particularly good if you were a bit ‘over served’ the night before or have been exercising and need to cool down and quench your thirst.

100ML JAMU

4-5 ICE CUBES

I ORANGE - JUICED

1/2 LEMON - JUICED

Blitz the ice cubes and the Jamu together

Add the orange and lemon juice and mingle it all together for a brief moment.

There should be a nice frothy top from the whizzing and it may be a bit slushy - but it should not be too slushy that it doesn’t pour and potentially gives you brain freeze!

RECIPE : IMMUNE & ENERGY BOOSTER by Clovis Ferguson

MORNING IMMUNE AND ENERGY BOOSTER

This one came from Martin Holec who creates amazing cocktails in the Sitting Room at Delahunt Camden.

100ML JAMU

100ML NUT MILK (I USE OATMILK)

1/4 TEASPOON OF CINNAMON POWDER

1 TEASPOON OF RAW COCONUT OIL

You could just put all the ingredients in to nutribullet or blender and drink this cold but it is very good warm too. Martin used a milk frothing gadget (nespresso aeroccino 4). Some coffee machines have a milk frothing part but if you don’t have any of these then just use an old fashioned saucepan and whisk while heating the mix. Finish by grating some nutmeg over the top.

The genius part of this is the coconut oil. The fat within this oil helps us to absorb the curcumin within the turmeric even further. So, we have the black pepper in Jamu and then the good cholesterol, energy boosting coconut oil all working together to get the Jamu gold in to our bloodstream.

RECIPE : JAMU LIME COOLER by Clovis Ferguson

JAMU LIME COOLER WITH PINK GRAPEFRUIT

This is a superb drink to quench thirst. Much like a lemonade but not so sweet and much fancier. A great way to refresh after sports or a hot day. Make a big batch of it and leave in your fridge for a refreshing hit when you need it.

A note about grapefruits: If you are on any prescription drugs then you may have to check whether it is suitable for you to have the grapefruit. If in doubt, as I know it interferes with some drugs, then just leave it out and go with the lime alone with a bit more honey - still delicious.

TO MAKE 1 LITRE

200ML JAMU

1 LIME - JUICE AND ZEST (only zest if you know it is organic and unwaxed)

1 TABLESPOON HONEY (or more if you want it sweeter)

1 PINK GRAPEFRUIT - JUICED

STILL FILTERED WATER

If you are using the lime zest then start by doing this : Zest and then juice the lime and add both to the honey and mix until the honey has dissolved.

Juice the grapefruit, measure out the Jamu, mix all the ingredients together and top up with water.

This is most refreshing cold - so once made sit in the fridge until you want some.

This will last up to a week refrigerated.

RECIPE : GOLDEN SMOOTHIE by Clovis Ferguson

Milk Kefir 30% copy.png

GOLDEN SMOOTHIE

I live on a dairy farm so obviously have a great source for milk which is why I got in to making milk kefir.

Milk kefir grains are added to milk and over time the kefir bacteria feed on the lactase (the sugar within milk) and it ferments to make a wonderfully sour/tangy yoghurt style drink that is loaded with good bacteria to help keep a healthy gut and more. As with the kombucha pairing, Jambucha it is another win win as you are getting fermented goodness and the wonderful ingredients of Jamu all at once.

If you do not have milk kefir or can not find it in your local health store then swap it out for natural yoghurt and it will still be delicious.

SERVES 2

200ML JAMU

200ML MILK KEFIR

1 TSP HONEY (more if you want)

1/2 LEMON ZEST

Start by taking the zest off of half an organic unwaxed lemon. In a nutribullet or smoothie maker mix the honey zest and jamu and blitz for short while.

Add the honey and the kefir and blitz once more but not too much as it is just to mingle it all together, not get a big frothy shake.

The curcumin within turmeric is fat soluble so when mixed with the milk kefir or yoghurt their fat ultimately helps to transport the good stuff in to our bloodstream.

Note. If you are using milk kefir then this smoothie will not store very well. It is best to drink straight away or within a day.

Sheridans Cheesemongers will host it’s 10th Irish food festival this Sunday May 26th , from 10am-6pm, at their Virginia Road Station Headquarters in Co. Meath.

We are delighted to bring our JAMU to this fantastic festival.

The festival began in 2009 as a gathering of their suppliers and has grown into one of the biggest food events of the year. They’ll have over 100 of Ireland’s greatest food producers as well as workshops and family entertainment.

This year, they highlight the many producers from across Ulster, Connacht, Leinster, and Munster that make up the diverse food culture of our island. The ethos of the festival is simple: only Irish food on the tables, and only producers behind the tables. They implement strict Irish origin only guidelines and insist the producers themselves run their stalls.

Children are always central to the Festival and we have a series of workshops for the next generation of Irish food lovers. This year, they have legendary food producer and author Olivia Goodwillie running three Children’s workshops with themes focusing on wheat, dairy, and vegetables.

Entry is 5 Euros, children free, Free parking, free children’s entertainment & workshops.

We hope to see you there!

Westcorkcooler_sqr.png

A refreshing long drink made with our turmeric based drink, Jamu, mixed with a lime syrup & still water. It is a wonderful summer drink to enjoy on hot days or to refresh, rehydrate & revitalise. It is quick and easy to make and will keep in your fridge for a few days. That is if you dont drink it all in one sitting!

Makes enough for 1 Litre

200mls Jamu

60mls Lime Syrup

Still water

To make the simple lime syrup.

1 Lime, juiced and some zest as well

1 Tablespoon of honey (organic coconut sugar or organic sugar can be used instead)

1. Gently heat the honey, lime juice & zest

2. Add a tiny bit of water if your lime is not very juicy. You dont want to make a thick syrup.

3. Once dissolved turn off the heat and allow it to infuse and the syrup to cool

To make: Simply mix all the ingredients together in a jug and chill in the fridge or serve over ice with a wedge of lime.
